The dough rests all night, so the street smells of bread by half past seven.

Tomás, our head baker, arms crossed in front of the bread shelves

levé opened in 2019 with one deck oven on Rua da Escola Politécnica and a rye starter Tomás carried home from Copenhagen. We still bake everything in the room behind the counter, from four each morning, and sell it the same day.

why levé

Slow dough, early mornings and flour we can trace

  • Every loaf proves overnight in the cold room, which gives the crust its blisters and the crumb its tang.

What our regulars say

A man in a leather armchair by the window, holding a croissant

“The rye walnut keeps four days on our counter and still toasts like it came out that morning. I buy two on Saturdays so Tuesday has bread too.”
