levé opened in 2019 with one deck oven on Rua da Escola Politécnica and a rye starter Tomás carried home from Copenhagen. We still bake everything in the room behind the counter, from four each morning, and sell it the same day.

Every loaf proves overnight in the cold room, which gives the crust its blisters and the crumb its tang.
Our wheat and rye come from two mills in the Alentejo, stone-ground in the same week we bake with it.
Six bakers and no moulds. A few loaves come out leaning, and we sell those too.
What is left at 19:00 goes to the parish kitchen on Rua Ferreira Borges, three doors from the Campo de Ourique shop.
